Cook 1 lb of fresh spinach that has been cleaned and de-stemmed without added water in a pot slightly covered for just a few minutes until tender and bright green.
While spinach is wilting prepare a large bowl with ice cold water.
Once spinach tender and bright green strain immediately immerse it in the ice cold water. This helps it retain it's green colour.
Drain well and squeeze the spinach with your hands to remove the excess water.
Transfer to a blender or processor.
Puree until very smooth and transfer in a small bowl. May add a little cold filtered water while blending if needed.
Season with 1 clove of minced fresh garlic, sea salt and black pepper to taste. You can add a little more water to get desired consistency.
Notes
Serve over baked potato, fish, on cold rice pasta, or on steamed vegetables.
